No, this is not a post about ice cream. Sorry to disappoint you all. It’s about breakfast spring rolls.

What is this madness?  You ask. Are you talking about those delicious vegetable appetizers wrapped in rice paper? And I answer you, Oh yes, you read right. And they are super yummy!

 I toyed with the idea of making the spring rolls into a savory breakfast by using eggs. But as I stared at the ingredients I took out of the fridge, I wasn’t feeling it.

As I wondered what I was going to do, I remembered the episode of Giada at Home where she made spring rolls with sweet sticky rice and mango.  So, I decided to make them with fruit. I didn’t make sticky rice, but they were delicious just the same.

I included fruit and yogurt in one, fruit and sesame butter, in another, and one with just fruit. They might not look beautiful…but they tasted beautiful.

This recipe made 5 full rolls. That was definitely enough for 2 to 3 people to enjoy with tea or coffee. Mmmmm.

Fresh Fruit Breakfast Spring Rolls

Ingredients:

1 medium apple, sliced1 banana, sliced
5 strawberries, sliced
4 rice paper wrappers
1 c plain Greek yogurt
1-2 tbsp pure maple syrup
1-2 tbsp nut butter of choice

Method:

For the yogurt filled rolls.

  1. Stir the yogurt and the maple syrup together. Set aside
  2. Lay a damp kitchen towel on your work surface.  Soak a rice paper round in very warm water for 20-30 seconds until just starting to soften.
  3. Place the rice paper on the damp towel and add a dollop of the maple yogurt. On top, place two slices of apple, banana, and strawberries.100_1869
  4. Fold over the bottom of the wrapper over the fruit. Fold the sides inward and continue to roll upward, enclosing the fruit in the wrapper.100_1870
  5. Slice on a diagonal.

For the nut butter filled rolls.

  1. Lay a damp kitchen towel on your work surface.  Soak a rice paper round in very warm water for 20-30 seconds until just starting to soften.
  2. Place the rice paper on the damp towel and add a spread of nut butter. On top, place two slices of apple, banana, and strawberries.
  3. Fold over the bottom of the wrapper over the fruit. Fold the sides inward and continue to roll upward, enclosing the fruit in the wrapper.
  4. Slice on a diagonal.100_1873
